Waldorf Salad Ingredients
½ cup walnuts, toasted
½ cup plain greek yogurt
2 tablespoons mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
¼ teaspoon cardamom, grated
¼ teaspoon nutmeg, grated
½ lemon, zest finely grated, then juiced
½ teaspoon sea salt
½ teaspoon black pepper
2 large apples, tart, cored and sliced
2 ribs celery (with leaves), shaved, leaves separate
¼ cup golden raisins
½ cup grapes, sliced
2 oz. blue cheese
1 head radicchio lettuce, divided into leaves
Waldorf Salad Method
- Whisk the yogurt, mayonnaise, parsley, honey, lemon juice and lemon zest in a large bowl and season generously with pepper and salt.
- Add half the walnuts, apples, celery, grapes, raisins and radicchio to the bowl with the dressing.
- Arrange the remaining lettuce leaves on a plate. Sprinkle with remaining half of ingredients and serve.
