 Pan Seared Chile Beef Tostada

4oz. Beef, pan seared and sliced

Salt and pepper

Pickled jalapenos

Dried chile sauce

Cilantro

Red onion

lime mayo

Tostada

  1. Lay out tostada, top with chile sauce, then beef, then lime mayo, pickled red onion, fresh onion, cilantro. Serve warm

Dried Chile Sauce

1 Ounces Chile Powder

½ ounces Smoked Paprika

½ ounces Paprika

½ ounces Chile de arbol powder

½ each Onion, diced

2 each Garlic, cloves

½ tablespoons Salt

¼ cup Apple Cider Vinegar

1 tablespoons Sugar

¼ cup Water


  1. In a pan over medium heat, toast 4 chile powders until aromatic and darkened slightly. 

  1. Let cool to room temperature. Place garlic, onion, salt, sugar, water, vinegar in blender. Pour powders on top and blend until smooth. Add water if needed and too thick

Sweet Pickled Chilies

½ cups Sliced Chilies

½ cups Apple Cider Vinegar

½ cups White Wine vinegar

½ cups Sugar

½ tablespoons Chile Flakes

½ tablespoons Salt

2 tablespoons Lime Juice

1 each Bay Leaves

pinch Cardamom

1 each Star Anise

  1. Combine everything but chilies into a pot, turn to high heat and turn down to a simmer. Let simmer for five minutes.

  1. Pour over sliced chiles.
