Mushroom Al Pastor Taco

Grilled mushrooms with chile sauce

Pineapple sauce

½ tablespoon cilantro, chopped

2 tablespoons red onion, diced

½ cup Cabbage, shredded

1 tsp lime juice

½ tsp canola oil

  1. Warm tortilla in a pan, repeat with all tortillas
  2. Squeeze lime onto cabbage and add canola oil. Season with salt and set aside
  3. Add pineapple sauce, then mushrooms, red onions and top with dressed cabbage, then cilantro

Grilled mushrooms

½ lb. mixed mushrooms

Dried chile sauce

1 tablespoon canola oil

  1. Let mushrooms marinade overnight.
  2. On a flattop grill or sauté pan, cook mushrooms in oil until browned on edges. Set aside

Dried Chile Sauce

1 Ounces Chile Powder

1/2 ounces Smoked Paprika

1/2 ounces Paprika

1/2 ounces Chile de arbol powder

1/2 each Onion, diced

2 each Garlic, cloves

1 tablespoons Salt

1/4 cup Apple Cider Vinegar

1 tablespoons Sugar

1/4 cup Water


  1. In a pan over medium heat, toast  4 chile powders until aromatic and darkened slightly. 

  1. Let cool to room temperature. Place garlic, onion, salt, sugar, water, vinegar in blender. Pour powders on top and blend until smooth. Add water if needed and too thick

Pineapple Sauce

¼ each pineapple, cored and grilled

1 tablespoon thick it

1 teaspoon salt

  1. Char pineapple on grill.  Place in blender with remaining ingredients and puree.
