Mac Base (small batch) 

Servings: 1 

1/2 pound butter 

2 tablespoons garlic minced 

1/4 cup yellow onion, minced 

3 cups half and half 

1 pinch chile flakes 

1 pinch nutmeg 

1 1/2 teaspoons salt 

1 1/2 pounds cream cheese 

1 1/4 pounds parmesan grated 

1/2 pound cheddar cheese shredded 

1/2 pound american cheese 

1/4 cup corn starch 

2 cups beer 

In a heavy bottom pot: Add first 3 ingredients and saute till translucent. 

Transfer above pot into a double boiler. 

Add everything but the beer and corn starch: 

Bring to 175°

In a small bowl: mix beer and corn starch till incorporated and add to double boiler. 

Beurre mix or whisk vigorously till incorporated. 

Adjust thickness when reheating with half and half if needed.
