Kale Salad Ingredients
-1 head of Dinosaur Kale, cleaned and ribs removed, cut into 1-2" pieces
-2 oz. Aged Hard cheese, micro planed
-2 tablespoons glazed Walnuts
-1/2 cup shaved celery
-3 oz. lemon garlic dressing
1. Mix greens with dressing, half the walnuts, half the cheese and half the celery.
2. Put onto chilled plate. Sprinkle remaining walnuts, celery and cheese. Sprinkle with pepper.
Lemon Garlic Dressing Ingredients
-1 tablespoon garlic, chopped
-1/2 tablespoon dijon mustard
-1/2 tablespoon Worcestershire
-2 tablespoon lemon juice
-1/2 tablespoon sugar
-1 tablespoon apple cider vinegar
-1/2 teaspoon salt
-1/2 teaspoon pepper
-4 oz. olive oil
1. In a small mixing bowl with a whisk, combine garlic, dijon, Worcestershire, lemon juice, sugar, vinegar, salt and pepper. Mix until combined.
2. While mixing, drizzle in olive oil, a little at a time until incorporated each time. Repeat until olive oil is combined.
3. Set aside
