Honey Truffle Deviled Eggs 

2 ea Hard Boiled Eggs, split and yolks reserved for filling

A bed of radish micro greens

4 oz Truffle Filling

4 slice preserved black truffle

¼ oz Crispy Shallots

Sprinkle of Honey Truffle Salt

Lay the microgreens on the plate, place your egg whites on the plate. Use a pastry bag to pipe in the filling, place 1 slice black truffle on top of each egg, garnish with crispy shallots and a sprinkle of honey truffle salt.


Deviled Filling

10 ea Egg Yolks 

1 ½ tablespoons Honey Vinegar 

¼ teaspoon Smoked Paprika 

1 clove Garlic, minced

1 teaspoon Honey Granules 

1 teaspoon Black Truffle Peelings

¼ teaspoon Salt

2 tablespoon Mayo

  1. Place all ingredients in Robo Coupe/food processor and blend until smooth. Store in pastry bags.
