Endive Apple Salad Ingredients

1 head endive, split into leaves

1 apple, cored and sliced

1 oz. aged cheddar, cut into pieces

2 tablespoons candied pecans

2 tablespoons rendered bacon

4 oz. buttermilk-poppy seed dressing

1. Mix endive, half the apples, cheddar, pecans and bacon with dressing.

2. Plate endive and top with remaining apples, pecans, cheddar and bacon

 

Buttermilk Poppyseed Dressing

1/2 cup Cheddar cheese, white, grated

2 tablespoons Apple cider Vinegar

1 tablespoon Poppy Seeds

½ teaspoon Garlic, minced

½ teaspoon yellow Onion, minced

1 tablespoon Lemon Juice

½ teaspoon Sugar

6 oz. Mayonnaise

¼ cup Sour Cream

¼ cup Buttermilk

¼ teaspoon Salt

¼ teaspoon Pepper

 

Endive Apple Salad Method

1. Mix cheddar, vinegar, poppyseeds, garlic, onion, and lemon juice in a small bowl with a whip. Mix until mashed and

combined. Add mayo and mix until combined.

2.After mayo is combined, add sour cream and repeat. With the mixer on, slowly drizzle in buttermilk
