Banana Bread Pudding 

2 Cups Milk

2 cups Half n Half

3 tablespoons Butter

1 teaspoon Vanilla Extract

1 teaspoon Cinnamon

1/2 teaspoon Nutmeg

3/4 cup Brown Sugar

3 tablespoons Rum

3 quarts Banana Bread , large diced

2 cups Toasted Pistachios

Pinch cardamon

8 each Egg Yolks

  1. Preheat oven to 350 degrees F. In a large saucepan, add milk, butter, vanilla, cinnamon, brown sugar, and rum and heat until warm. Simmer and stir until sugar dissolves. Slowly temper into whipped egg yolks
  1. Into a large bowl add the cubed banan bread and pour in the hot milk mixture. Let sit for 30 minutes so the bread absorbs the milk. Pour bread pudding and pecans into an oiled 1/2 pan and bake for 50 minutes. until liquid becomes set.

Caramel Sauce

1 cup sugar

½ cup water

Splash lemon juice

Pinch sea salt

2 tablespoons cream

1 tablespoon butter

  1. In a small pot, combine sugar, water, lemon juice and salt over high heat. Bring to simmer
  2. Do not stir, let continue to cook until caramelized. Once caramelization starts, turn heat down until desired darkness. Let cool slightly, for about 5 minutes
  3. Slowly whisk in cream and butter
